Scope and Content Note
This Sub-Group contains records of the University of Missouri-Columbia College of Agriculture, Food, and Natural Resources' Department of Food Science and Nutrition. Included in this Sub-Group are correspondence files, administrative subject files, grant files, photographs and photographic slides, committee meeting minutes, surveys, faculty professional papers, faculty resume abstracts, reprints of faculty publications, faculty personnel files, degree program proposals, and research reports.
Series Descriptions:
Series 1. - C:3/26/2 (A85-20)
This Series holds records of the UMC Department of Food Science and Nutrition. Included in this Series are forty-four photographs and one hundred and two photographic slides taken at departmental events and activities (1970). These photographs were preserved by Professor Harold J. Bassett. Also included is a bound volume of National Geographic Magazine published in 1923, one issue of which contains an article entitled "Missouri, Mother of the West."

Series 2. - C:3/26/5 (A86-147)
This Series contains records of the UMC Department of Food Science and Nutrition (1966-1984). Included in this Series are research grant correspondence, grant reports, and related materials. Subjects in this Series include research into Palatability of Missouri Fish, Development of New Frozen Meat Products, Nutrient Composition of Meats, and the Carnation Corporation Odor Project.

Series 3. - C:3/26/1
This Series holds records of the UMC Department of Food Science and Nutrition (1969). Included is a 140 page document that was submitted by the Department of Food Science and Nutrition to the UMC Graduate School Dean. It is entitled A Request for Master of Science and Doctor of Philosophy Degree Programs in Food Science. This proposal contains a contemporary evaluation of the department, vitas for active faculty, a list of courses being taught, proposed new courses, anticipated faculty and staff needs, estimated cost of implementing the program, suggested requirements for the new degrees, and degree objectives.

Series 4. - C:3/26/NP (A96-9)
This Series contains records of the UMC Department of Food Science and Nutrition (1990). Included in this Series are administrative files pertaining to personnel matters such as applications for employment and promotion and tenure decisions. This Series contains only a sampling of the complete departmental personnel files.

Stringer and Roger Mitchell (1983), and grant and award files.

Series 6. - C:3/26/6 (A99-12)
This Series contains the printed program for Nutrition Emphasis Week, 2/22/1971 - 2/24/1971 honoring Dr. Paul Gyorgy. Dr. Gyorgy delivered the Hogan Memorial Lecture, which climaxed the week's activities. Also included in the Series is correspondence between Professor William Pfander and various representatives of The American Journal of Clinical Nutrition concerning publication of Dr. Gyorgy's lecture.

This Series contains records created or received by the University of Missouri-Columbia's Division of Food Science and Human Nutrition, (1980-1994). This Series contains correspondence, committee agendas, professional conference records, committee meeting minutes, grievance files, MU Extension news releases, floor plans of Gentry Hall facilities, Agricultural Experiment Station correspondence, Agricultural Experiment Station Committee on Organization and Policy meeting records, Weldon Spring Awards records, faculty resume abstracts, and UMC and non-UMC survey records.

Research titles include People Helping People, (n.d.), Test Tube to Table, (1979), To Your Health, (1976), and Agriculture Looks to the Future, (1972).

This Series contains the teaching, research, and publication materials of Milton E. Bailey, Professor of Food Science and Human Nutrition, (1958-1993). The records consist of syllabi and teaching files, including student research [RESTRICTED], for courses in Food Analysis, Food Chemistry, Muscle Biochemistry, Food Technology, Food Biology, Physics of Food Color, and graduate seminars. The Series also contains research files on N-nitrosamine in cured meat, analysis of meat flavor compounds, muscle synthesis, synthetic meat flavors, and meat aroma and appearance.

Faculty promotion and tenure records and Academic Personnel files are restricted for 75 years, or the lifetime of the individual.
